Dehydration is a great way to preserve tomaotes. Tomaotes with consist of more solid make good candidates for dehyration. Wild Cherry Tomato is prolific producer, meaty and flavorful. It is great for fresh eating, and always produces more for preserving. Dehydrated tomatoes are great for making sauces, soup or olive oil dips.
Step (1) Harvest and wash Large Wild Cherry tomatoes and Cuban Grape Tomatoes. Remove ones with blemish and discard them, or save them for making tomato sauce.
Step (2) Cut tomatoes in half and place the cut side down on the dehydrator shelves.
Step (3) It takes anywhere from 18-24 hr. for the tomatoes to dry. Once they are dried, pack them in plastic bags and keep then in the freezer.The dried tomatoes will keep in the freezer for up to a year.
Olive Oil Dip:
This divine olive oil dip uses the dehydrated tomatoes preserved above, combining with other Mediterranean flavors. It makes a great treat anytime. Pour a cup of olive oil in a jar, add dehydrated tomatoes, crushed garlic, crushed red pepper flakes, chopped kalamata olive and crumbled feta cheese. Let stand at room temperature for 2 hours, serve with fresh homemade bread.
