Gluten Free Peanut Butter Cookies 

If you have loved ones with celiac disease or gluten intolerant, you know how daily meals can become a difficult task. Although increasingly gluten free snakes are available, the selection is limited and the price is high. So save money and try this easy recipe yourself.

    Ingredients:

  • 2 C. peanut butter
  • 2 C. cane sugar
  • 2 tsp baking powder
  • 2 whole eggs
  • Method:
    (1) Mix baking power with sugar together
    (2) Add eggs, beat with a stand mixer until well blended
    (3) Add peanut butter, one cup at a time, beat until the mixture forms a smooth dough
    (4) Form the dough into 1" balls, press slightly with a fork
    (5) Bake in a pre-heated 350F oven until done. 10-12 minutes

Note: Stand mixer is one of the most important piece of kitchen appliances in a home. When purchasing a stand mixture take what you will use it for into consideration. The cheaper models have lower power, typically 250W, which is ok for light duty works such as making cakes and cookies or whipping egg whites. If you want to use it to make bread or other more stiff applications, consider the higher pro models. They are ranging from 350-450W. And they are more durable.
