Easy Delicious Spread: Basil Tomato Butter

This is one of my favorite recipe of all time, especially in the summer time when I have lots of basil from the garden. There are five ingredients in it: fresh basil, garlic, butter, tomato paste and salt. Mixed with creame cheese, this makes the most delicious shemear for homemade bagels. It is also great for sandwiches, basil tomato butter with a slice of good quality balogna is a meal on its own.

  • 2 C. loosely packed basil leaves, finely chopped
  • 1 Cup (2 sticks) of butter at room temperature
  • 1 small can (6 oz.) of tomato paste
  • 3 large cloves of garlic, grated with a Microplane grater (It is the best way to mince garlic)
  • Salt to taste

  • Method:
    Mix all ingredients together until well blended, either by hand or a small food processor.

    Serving Suggestions:
    Use on toast, serve with soft pretzels or fresh baked bread or as sandwich spread. Will keep in the fridge for up to two weeks. Or you can freeze extras for up to 3 month.
