Spring Delight: Creamed New Potatoes and Fava Beans & Fresh Peas 

Fava beans, fresh peas and new potatoes are always the first things coming out of my garden in the spring. They happen to make a fabulous dish together. Creamed New Potato and Fava Beans Plus fresh peas. The fresh flavor of this dish will make you want to grow a garden every year. Here's the recipe:

    Ingredients:
  • 1.5 C. fava beans and fresh peas, shelled;
    peel and remove the jackets of fava beans
  • 1 medium sized new potato
    cut into pea sized cubes
  • 1 T. butter
  • 1 T. flour
  • 3/4 C. milk or half-&-half, or a mix of the two
  • 1 clove of new garlic, crushed
  • 1 sprig of savory (the herb) if available
  • Salt and pepper to taste

  • Method:
    (1) Steam fresh java beans and fresh peas in a rice cooker/steamer for 6-8 minutes until the beans and peas turn soft.
    (2) Heat a frying pan on medium heat, add butter and flour. Cook until flour turns slightly brown. Add liquid. Stir until the sauce thickens.
    (3) Add crushed garlic, savory, steamed vegetables salt and pepper. Stir to combine.
    Serve warm.
