German Hot Potato Salad

This tasty salad is a healthier alternative to the traditional potato salad. It goes really well with just about any meat dish you serve, especailly good with sausages. This dish is made with freshly harvested red potatoes, making it even more delicious. By the way, potato is one of the easiest thing to grow in the garden. Try the different cultivars to experience the different flavor and texture.

  • 5 medium-sized red potatoes
  • 5 thick bacon slices
  • 1/2 C. diced celery
  • 1/4 C. diced onion
  • 2 T. course spicy brown mustard
  • 1/4 C. cucumber relish
  • 1/2 C. vinegar + 2 T. water
  • 1 t. sugar
  • 2 T. olive oil + 1 T. butter
  • 3 T. white flour
  • Salt and pepper to taste & chopped fresh parsley for garnish.

    (1) Cut the potatoes half, cook in water for 12-15 minutes, then cut into 1” pieces. You can peel the skin if you like.
    (2) Cook bacon until crisp, remove from pan, drain the bacon fat and leave a little in the pan. Add celery and onion to the pan. Cook until tender, 2-3 minutes. Remove, set aside.
    (3) To make the dressing: Heat oil and butter in a frying pan, stir in flours, cook until flour turn slightly brown. Add vinegar, water, sugar, mustard, relish, salt and pepper. Stir to blend everything together, if too thick add some water to thin. Add the sautéed celery and onion to the pan.
    (4) Pour hot dressing over potato pieces, stir, add crumbled bacon and parsley, stir again. Serve immediately
