Spicy Cabbage Salad

This healthy salad uses no oil; simply flavored by limejuice, salt and its ingredients. It is a good salad to have any time of the year, but especially good when the garden is on a hiatus as you can buy all the ingredients at the supermarket. Add other crunchy fruits and vegetables to your liking, such as apples, pears, green peppers, cucumbers etc. etc., whatever strike your fancy. This colorful, tasteful salad is full of phytochemicals and is a great energizer in the winter months.

  • 3 C. purple cabbage, shredded;
  • 1 Jalapeno pepper, finely chopped;
  • 1/2 C. chopped cilantro;
  • 2 T. limejuice;
  • 1 t. kosher salt.

Method: Mix all ingredients together, toss and serve.
