Winter Melody: Turnip Greens

In the middle of winter just when you think nothing in the garden is worthy of your efforts, think again! This delicious dish of turnip green incoroporate all the winter goodness from the garde and is packed with antioxidents. It sure to be a winter pick-me-uppper.

  • 2 Cups turnip greens, cut into 2" sections,
  • 2 slices of lean bacon, cut into 1/2" sections,
  • 1 small apple, grany smith or fuji, cut into 1/2" pieces,
  • 4" section of leek, white part only
  • 1 T. lemon juice,
  • Salt and pepper to taste.

Method: Fry bacon pieces in a frying pan until crisp. Add leek, cook until leek is wilted. Add turnip green, salt and pepper, cook until wilted. Add apple pieces, lemon juice, cook until apple pieces are tender, approximately 2 minutes. Serve with a hard boiled egg, home raised chicken egg if you can. Enjoy!
